CILOK … Simple Yet Delicious!


Orang Bandung kreatif dalam kuliner. Tidak dapat dipungkiri. Baik makanan ataupun minuman , dari yang berbahan sederhana, hingga yang super kompleks bisa diciptakan. Salah satunya “CILOK”, kependekan dari “aci dicolok”. Makanan apa lagi ini?

Ini makanan murah meriah (atau tepatnya jajanan) “jaman baheula” semenjak saya masih SD dulu. Bentuknya yaitu bola-bola tapioka yang dicelupkan/dicocolkan kedalam (kuah) bumbu kacang manis agak pedas dengan mengunakan tusuk sate atau sejenisnya. Hmmm… (saya sampai menelan ludah membayangkannya, padahal lagi puasa. Hehehe). Paling nikmat bila cilok disantap selagi panas atau hangat! Oh ya bagi yang penasaran ingin membuatnya, inilah resepnya…

Bahan :

150 gr tapioca (“aci’)

150 gr terigu

Haluskan :

Udang kering 1 sdm

Ketumbar 1 sdm

Bawang putih 2 siung

Garam secukupnya

Caranya :

  1. Rebus air hingga mendidih
  2. Campur tapioca sama terigu dan bumbu halus + garam setelah rata masukin air hangat aduk hingga kalis
  3. Bulet bulet kecil adonan lalu masukin ke air yg mendidih tadi , lalukan sampe adonan abis , terus biarkan sampe semua si cilok ngapung , udah mengapung biarkan mendidih 10 menit kemudian dan angkat, sisihkan.

Bumbu kacang :

5 buah Cabe merah

150 gr Kacang tanah , goreng dan haluskan

4 Cabe rawit merah ( kalo ga suka pedes skip)

Gula

Garam

Kaldu ayam/sapi

Caranya :

Kukus cabe hingga lembut lalu haluskan dan tumis hingga wangi , lalu masukkan kacang tanah , aduk rata dan masukan air + garam + gula + kaldu ayam, ukuran air secukupnya. Jangan terlalu encer, jangan terlalu kental. Setelah matang, masukkan cilok tadi kedalam bumbu kacang dan siap dicolok!

Bandung community is very creative in culinary field. It is inevitable. Neither food nor drink, made from a simple, up to a super-complex can be created. One of them “CILOK”, short for “aCI dicoLOK.” What food is this?
This is old fashioned cheap food (or snack) and exist since I was in elementry school. The shape of the tapioca balls are dipped  into little bit sweet-spicy peanut marinade, using a stick or the like. Hmmm … (I have to swallow hard to imagine, though again the fast. Hehehe). Cilok most delicious when eaten while hot or warm! Oh yes for the curious want to make it, here’s the recipe …

Material:
150 gr Tapioca (“ACI”)
150 gr flour

Refined:
1 tablespoon dried shrimp
1 tablespoon coriander
2 garlic cloves
Salt to taste

How:
1. Boil water until boiling.
2. Tapioca Mix with flour and spices + salt, after well mixed, put warm water, stirring until smooth.
3. Make small dots of batter, then enter this into the boiling water, do it until the dough is finished. Then let all cilok floating, up to 10 minutes later, and lift, set aside.

Peanut Marinade:
5 pieces of red pepper
150 g ground nuts, fried and mashed
4 Chilli red pepper (if you do not like spicy, pass)
Sugar
Salt
Chicken broth / beef

How:
Steam the peppers until soft, then puree and saute until it smells good, and enter the peanuts, stir well and inputs of water + salt + sugar + chicken broth. Remember! Do not be too watery, nor too thick. Once cooked, put into this peanut marinade and ready to serve!
